  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 0.5 teaspoon cayenne pepper
  • 1 cup diced tomatoes (canned)
  • 1 cup coconut milk
  • 1 cup water
  • 1 teaspoon salt
  • 0.25 cup fresh cilantro
  • 1 whole lime (optional, for serving)

Directions

Step 1

Prep the vegetables: Cut the cauliflower into florets, peel and dice the potatoes into 1-inch cubes, finely chop the onion, mince the garlic, and grate the ginger.

Step 2

Heat the vegetable oil in a large skillet or pot over medium heat.

Add the chopped onion to the skillet and sauté for 5 minutes, stirring occasionally, until softened and lightly golden.
