  • 1 cup couscous
  • 1.25 cups vegetable broth
  • 2 tablespoons olive oil

  • 0.5 cup toasted cashews
  • 0.25 cup dried cranberries
  • 2 tablespoons, chopped fresh parsley

  • 0.25 teaspoons black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

In a medium saucepan, bring the vegetable broth to a boil. Once boiling, remove from heat and stir in the couscous. Cover the pan and let the couscous steam for 5 minutes, then fluff it with a fork and set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened.
