  • 2 tablespoons tomato paste
  • 2 cups chicken or beef stock
  • 1 cup basmati rice, rinsed
  • 1 cup frozen peas
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro, chopped
  • 4 lime wedges (optional, for serving)

Directions

Step 1

Heat the vegetable oil in a large skillet or pot over medium heat.

Step 2

Add the diced onion and sauté for 3–4 minutes until soft and translucent.

Step 3

Stir in the garlic and ginger, cooking for 1 minute until fragrant.

Add turmeric, cumin, coriander, and curry powder, stirring to coat the onions evenly with the spices.
