Ingredients

  • 500 grams Beef (chuck or stew meat, cut into 1-inch cubes)
  • 2 large Yellow onions (sliced thinly)
  • 4 cloves Garlic (minced)
  • 1 tablespoon Ginger (minced or grated)
  • 2 tablespoons Curry powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Turmeric powder
  • 0.25 teaspoon Cayenne pepper (optional, for heat)
  • 400 milliliters Canned coconut milk
  • 250 milliliters Beef stock
  • 2 tablespoons Vegetable oil (or ghee)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Cilantro (chopped, for garnish)

Directions

Step 1

Heat the vegetable oil or ghee in a large, deep skillet or pot over medium-high heat.

Step 2

Season the beef cubes with a pinch of salt and pepper, then sear them in batches until browned on all sides. Remove the beef and set aside.

Step 3

Reduce the heat to medium and add the sliced onions to the same skillet. Cook for 5-7 minutes, stirring occasionally, until softened and slightly caramelized.

Step 4

Add the minced garlic and ginger to the onions, stirring for another minute until fragrant.

Step 5

Sprinkle the curry powder, ground cumin, ground coriander, turmeric powder, and cayenne pepper (if using) over the onion mixture. Stir constantly for 1-2 minutes to toast the spices.

Step 6

Pour in the canned coconut milk and beef stock, stirring well to combine.

Step 7

Return the seared beef cubes to the skillet, ensuring they are submerged in the sauce. Bring the mixture to a low boil, then reduce the heat to low, cover, and simmer for 45 minutes to 1 hour, until the beef is tender and the sauce has thickened.

Step 8

Taste and adjust seasoning with additional salt and pepper, if needed.

Step 9

Garnish with freshly chopped cilantro before serving.

Step 10

Serve hot with steamed white rice, flatbread, or your preferred side.
