  • 1 cup red kidney beans (canned, rinsed and drained)
  • 1 cup green beans (trimmed, blanched, and chopped)
  • 0.5 cup red bell pepper (diced)
  • 0.33 cup red onion (finely chopped)
  • 0.25 cup fresh cilantro (chopped)
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon curry powder
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon lemon juice (freshly squeezed)

Directions

Step 1

Blanch the green beans: Bring a small pot of water to a boil. Add green beans and cook for 2 minutes until they are tender but crisp. Immediately transfer them to a bowl of ice water to stop cooking. Drain and set aside.
