Ingredients

  • 240 ml Strong black tea (brewed)
  • 75 g Dried currants
  • 250 g All-purpose flour
  • 1 tsp Instant yeast
  • 1 tbsp Granulated sugar
  • 0.5 tsp Salt
  • 0.5 tsp Baking powder
  • 120 ml Warm water
  • 25 g Butter (for greasing and serving)
  • 0 Honey or preserves (optional, for serving)

Directions

Step 1

Brew a strong cup of black tea (240 ml) and allow it to cool to lukewarm temperature.

Step 2

Place the dried currants in a small bowl. Pour 2-3 tablespoons of the brewed tea over them and let them soak while preparing the batter.

Step 3

In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Whisk thoroughly to combine.

Step 4

Gradually pour the lukewarm tea and warm water into the dry ingredients while stirring. Mix until you achieve a smooth, thick batter.

Step 5

Drain the soaked currants and gently fold them into the batter.

Step 6

Cover the bowl with a clean kitchen towel and let the batter rise in a warm place for 60 minutes, or until it has doubled in size and is bubbly on top.

Step 7

After the batter has risen, whisk in the baking powder to activate it. The batter should be thick but pourable—if it's too thick, add 1-2 tablespoons of additional warm water.

Step 8

Preheat a griddle or heavy-bottomed skillet over medium-low heat. Lightly grease the surface with butter.

Step 9

Grease metal crumpet rings (if using) and place them onto the skillet. Spoon approximately 2-3 tablespoons of batter into each ring, filling them halfway.

Step 10

Cook the crumpets for 5-7 minutes, or until bubbles form on the surface and the tops look set. Carefully remove the rings and flip the crumpets. Cook for an additional 2-3 minutes, until golden brown on both sides.

Step 11

Repeat with the remaining batter, greasing the skillet and rings as necessary.

Step 12

Serve the crumpets warm with butter, honey, or your favorite preserves.
