Ingredients

  • 2 pieces zucchini (medium-sized)
  • 2 pieces carrots (large)
  • 1 piece red bell pepper
  • 3 cups baby spinach
  • 1 cup cherry tomatoes
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh parsley (chopped)
  • 2 tablespoons fresh basil (chopped)
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper (freshly ground)
  • 0.25 cup toasted sunflower seeds

Directions

Step 1

Wash and dry all the vegetables thoroughly.

Step 2

Using a spiralizer, create zucchini and carrot 'noodles' by spiralizing both vegetables into long, curly strips. Place them in a large salad bowl.
