  • 1 teaspoon Salt

  • 1 cup Heavy cream
  • 2 tablespoons Tomato paste
  • 2 tablespoons Unsalted butter
  • 6 whole Fresh basil leaves
  • 2 tablespoons Water
  • 1 teaspoon Olive oil
  • 1 teaspoon Freshly ground black pepper

Directions

Step 1

Begin by preparing the pasta dough. Combine the flour and salt in a large mixing bowl. Make a well in the center and crack in the eggs. Using a fork, gently beat the eggs and slowly incorporate the flour until it forms a shaggy dough.

Step 2

Turn the dough onto a lightly floured surface and knead for 8-10 minutes until it becomes smooth and elastic. Wrap the dough in plastic wrap and rest for at least 30 minutes.

While the dough rests, make the filling. Chop the fresh spinach finely and sauté it in olive oil for 2-3 minutes until wilted. Allow to cool, then mix the spinach with ricotta, Parmesan cheese, lemon zest, and a pinch of salt and pepper. Set aside.

After resting, divide the dough into four equal portions. Roll out one portion at a time into a thin sheet, using a pasta roller or rolling pin. Keep the remaining dough covered to prevent it from drying out.

Using a heart-shaped cookie cutter, cut out equal numbers of hearts from the pasta sheets. Spoon small mounds of the ricotta-spinach mixture in the center of half the hearts.

Lightly brush the edges of the filled pasta hearts with water, then place another heart-shaped pasta sheet on top. Press the edges gently to seal and remove any air pockets. Repeat until all Cupid's Pillows are formed.

Bring a large pot of salted water to a gentle boil. Meanwhile, make the pink cream sauce. Melt butter in a saucepan over medium heat, then stir in tomato paste and cook for 1-2 minutes. Add heavy cream and whisk until the sauce is smooth and pink. Simmer gently for 5 minutes, then season with salt, pepper, and chopped fresh basil.

Cook the ravioli in the boiling water for 2-3 minutes or until they float to the surface. Remove with a slotted spoon and toss gently with the pink cream sauce.
