Ingredients

  • 1 pint Strawberry ice cream
  • 1 cup Semi-sweet chocolate chips
  • 2 tablespoons Coconut oil
  • 0.5 cup Heart-shaped sprinkles
  • 0.5 cup Crushed graham crackers
  • 12 pieces Popsicle sticks
  • 1 sheet Parchment paper

Directions

Step 1

Line a baking sheet with parchment paper and place it in the freezer to chill.

Step 2

Using a small cookie scoop or spoon, form strawberry ice cream into 12 small balls (approximately 1.5 inches in diameter). Work quickly to prevent melting.

Step 3

Insert a popsicle stick into each ice cream ball and place them onto the chilled baking sheet. Freeze for 1 hour or until firm.

Step 4

In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 20-second intervals, stirring well between each, until smooth and fully melted.

Step 5

Pour the heart-shaped sprinkles and crushed graham crackers into separate shallow bowls for easy dipping.

Step 6

Remove the baking sheet with the frozen ice cream balls from the freezer. Working quickly, dip each ice cream ball into the melted chocolate to coat completely.

Step 7

Immediately roll each chocolate-coated ice cream ball in either heart-shaped sprinkles or crushed graham crackers. Place them back on the chilled parchment-lined baking sheet.

Step 8

Once all the ice cream balls have been dipped and coated, return the baking sheet to the freezer for at least 15 minutes to set.

Step 9

Transfer the finished Cupid's Ice Cream Treats to a serving platter and enjoy immediately, or store in an airtight container in the freezer for up to 1 week.
