Ingredients

  • 1.5 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon unsalted butter

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Line the bottoms with parchment paper for easy removal.

Step 2

In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined using a hand or stand mixer.

Step 4

Gradually stir in the boiling water. The batter will be thin, but this ensures the cake is moist.

Step 5

Divide the batter evenly between the prepared cake pans and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.

Step 6

Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 7

To make the ganache, heat the heavy cream in a small saucepan over medium heat until it begins to simmer. Do not let it boil.

Step 8

Pour the hot cream over the chocolate chips and butter in a heatproof bowl. Let it sit for 5 minutes, then whisk until smooth and glossy.

Step 9

Once the cakes are completely cool, place one cake layer on a serving plate. Spread a thin layer of the ganache over the top.

Step 10

Place the second cake layer on top, then pour the remaining ganache over the entire cake, gently spreading it with an offset spatula for even coverage.

Step 11

Let the ganache set for about 30 minutes at room temperature. Slice, serve, and enjoy your Cupid's Chocolate Cake!
