Ingredients

  • 1 pound Skirt steak
  • 2 teaspoons Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Lime juice
  • 1 Red bell pepper, thinly sliced
  • 1 Green bell pepper, thinly sliced
  • 1 Yellow onion, thinly sliced
  • 8 small Tortillas
  • 0.5 cup Sour cream (optional, for serving)
  • 0.25 cup Fresh cilantro (optional, for garnish)

Directions

Step 1

In a small bowl, combine ground cumin, smoked paprika, garlic powder, salt, and black pepper.

Step 2

Pat the skirt steak dry with paper towels and rub the spice mixture evenly over both sides of the steak.

Step 3

Drizzle 1 tablespoon of olive oil on the steak and rub it in to help the spices adhere. Set aside to marinate for 10-15 minutes.

Step 4

While the steak marinates, heat the remaining tablespoon of olive oil in a large skillet over medium-high heat.

Step 5

Add the sliced bell peppers and onions to the skillet. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized. Remove from the skillet and set aside.

Step 6

In the same skillet, turn the heat to high and sear the skirt steak for 3-4 minutes per side for medium-rare, or longer according to your preferred doneness.

Step 7

Remove the steak from the skillet and let it rest on a cutting board for 5 minutes before slicing it thinly against the grain.

Step 8

Return the sliced steak to the skillet briefly to toss with the sautéed vegetables and lime juice.

Step 9

Warm the tortillas in a dry skillet or microwave, then assemble the fajitas by adding steak and vegetables to each tortilla.

Step 10

Serve hot with optional sour cream and garnish with fresh cilantro.
