Ingredients

  • 1 cup Basmati rice
  • 2 cups Water
  • 1 teaspoon Ground cumin
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 1 large Avocado
  • 1 tablespoon Lime juice
  • 2 tablespoons Fresh cilantro
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, heat the olive oil over medium heat. Add the ground cumin and stir for 30 seconds, allowing the spice to bloom and release its aroma.

Step 3

Add the rinsed rice to the saucepan, stirring gently to coat the grains with the cumin-infused oil for about 1 minute.

Step 4

Pour in the water and add the salt. Stir well, then bring the mixture to a boil over high heat.

Step 5

Once boiling, reduce the heat to low, cover the pan, and simmer for 15 minutes, or until the rice is tender and the water is fully absorbed.

Step 6

While the rice cooks, prepare the avocado. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Gently mash it with a fork, keeping it slightly chunky.

Step 7

Stir in the lime juice, chopped fresh cilantro, and black pepper into the mashed avocado. Mix thoroughly and set aside.

Step 8

Once the rice is cooked, remove it from heat and let it sit, covered, for 5 minutes, allowing the steam to settle.

Step 9

Fluff the rice with a fork, then gently fold in the mashed avocado mixture until evenly combined.

Step 10

Serve the cumin rice with avocado immediately, garnished with extra cilantro if desired.
