  • 1 tsp ground coriander
  • 0.5 tsp ground turmeric
  • 6 cups chicken broth
  • 3 medium carrots, sliced
  • 3 stalks celery, sliced
  • 2 cups cooked rice or noodles (optional)
  • 0.25 cup fresh cilantro, chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 lime lime wedges (for serving)

Directions

Step 1

Heat the olive oil in a large soup pot over medium heat.

Step 2

Season the chicken thighs with a pinch of salt and black pepper. Add them to the pot and sear for 3-4 minutes per side until golden brown. Remove the chicken and set it aside.

In the same pot, add the diced onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
