  • 4 large Russet potatoes
  • 6 tablespoons Unsalted butter

  • 2 teaspoons Salt
  • 1 teaspoons Ground black pepper
  • 2 tablespoons Olive oil
  • 2 large Yellow onions
  • 1 teaspoons Granulated sugar

Directions

Step 1

Peel and cut the russet potatoes into even-sized chunks. Rinse them under cold water to remove excess starch.

Step 2

Place the potatoes in a large pot, cover with cold water, and add 1 teaspoon of salt. Bring the water to a boil over medium-high heat, then reduce the heat and simmer for 15-20 minutes or until the potatoes are fork-tender.

While the potatoes cook, prepare the caramelized onions. Slice the yellow onions thinly.
