Ingredients

  • 1 medium (approximately 200g) Cucumber
  • 1.5 cups Yoghurt
  • 0.5 teaspoons Roasted Cumin Powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black Pepper Powder
  • 2 tablespoons (chopped) Fresh Cilantro (Coriander) Leaves
  • 1 small (finely chopped, optional) Green Chili
  • 1 tablespoon (chopped, optional) Mint Leaves

Directions

Step 1

Wash and peel the cucumber. Using a box grater, grate the cucumber into a bowl. If the cucumber is very watery, gently squeeze out some excess water using your hands or a clean kitchen towel.

Step 2

In a mixing bowl, whisk the yoghurt until smooth and creamy.

Step 3

Add the grated cucumber to the whisked yoghurt and mix gently to combine.

Step 4

Stir in the roasted cumin powder, salt, and black pepper powder.

Step 5

If desired, add the finely chopped green chili for a hint of spice.

Step 6

Fold in the chopped cilantro and mint leaves (if using). Adjust seasoning to taste.

Step 7

Chill the raita in the refrigerator for at least 10 minutes before serving to let the flavors meld.

Step 8

Serve cold as a side dish with your favorite Indian meals, or enjoy it as a dip with naan or pita bread.
