  • 500 grams Large shrimp, peeled and deveined
  • 1 whole English cucumber
  • 200 grams Cherry tomatoes
  • 0.5 whole Red onion, thinly sliced
  • 3 tablespoons Fresh cilantro, chopped
  • 2 tablespoons Extra-virgin olive oil
  • 3 tablespoons Lime juice, freshly squeezed
  • 1 teaspoon Honey
  • 1 clove Garlic, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Bring a medium-sized pot of water to a gentle boil. Add the shrimp and boil for 2-3 minutes, or until the shrimp turn pink and are opaque. Drain and immediately rinse under cold water to stop the cooking process. Set the shrimp aside to cool.
