Ingredients

  • 1 large Cucumber
  • 4 tablespoons Cream cheese
  • 2 tablespoons Mayonnaise
  • 1 tablespoon Fresh dill
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 8 slices White or whole-grain bread
  • 2 tablespoons Butter

Directions

Step 1

Wash and dry the cucumber, then thinly slice it using a sharp knife or mandoline. Set the slices aside on a paper towel to remove excess moisture.

Step 2

In a small bowl, combine the cream cheese, mayonnaise, fresh dill, salt, and ground black pepper. Mix until smooth and well combined.

Step 3

Lightly butter one side of each bread slice. Spread the cream cheese mixture evenly on the buttered side of all 8 slices.

Step 4

Place an even layer of cucumber slices on half of the bread slices (4 slices). Be sure to overlap the cucumber slices slightly for full coverage.

Step 5

Top each cucumber-covered slice with one of the remaining cream cheese-covered bread slices, cream cheese side down, to form a sandwich.

Step 6

Using a sharp knife, trim the crusts off each sandwich for a clean, classic presentation.

Step 7

Cut each sandwich into desired shapes—rectangles, triangles, or squares—for serving.

Step 8

Serve immediately or cover with a damp paper towel and plastic wrap to keep fresh until ready to serve.
