  • 2 cups Plain yogurt
  • 1 medium Cucumber
  • 2 tablespoons Fresh mint leaves

  • 1 small Green chili (optional)
  • 0.25 teaspoons Sugar
  • 1 tablespoon Fresh cilantro leaves (optional, for garnish)

Step 2

Chop the fresh mint leaves finely. If you're using a green chili, finely chop it as well.

Step 3

In a mixing bowl, whisk the plain yogurt until smooth.

Step 4

Add the grated cucumber, chopped mint leaves, salt, ground roasted cumin, sugar, and chopped chili (if using) to the yogurt. Mix well to combine.

Step 5

Taste and adjust the salt or spices as needed.

Step 6

Transfer the raita to a serving bowl and garnish with fresh cilantro leaves if desired.

Step 7

Serve chilled as a side dish with biryani, pulao, or any spicy curry. It can also be served as a cooling dip alongside appetizers like pakoras or samosas.
