Ingredients

  • 200 grams Enoki mushrooms

  • 1 teaspoon Sugar
  • 1 clove Garlic, minced
  • 1 teaspoon Sesame seeds (optional, for garnish)
  • 1 Green onion, thinly sliced (optional, for garnish)

Directions

Step 1

Wash and trim the ends of the cucumbers. Slice them thinly into rounds or half-moons, depending on your preference.

Step 2

Place the sliced cucumbers in a bowl and sprinkle with 1 teaspoon of salt. Toss to distribute evenly and let sit for 10 minutes to draw out excess moisture.

Step 3

While the cucumbers are resting, trim the base of the enoki mushrooms to remove the root cluster. Separate the mushrooms into smaller clusters and rinse under cold water. Pat dry with a paper towel.
