Ingredients

  • 2 pieces English cucumber
  • 200 grams Cream cheese
  • 2 tablespoons Greek yogurt (plain)
  • 2 tablespoons Fresh dill
  • 1 teaspoon Lemon zest
  • 0.5 teaspoons Garlic powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 10 pieces Cherry tomatoes

Directions

Step 1

Wash the cucumbers thoroughly and pat them dry with a towel. Using a vegetable peeler or knife, partially peel alternating strips of skin to create a striped pattern.

Step 2

Slice the cucumbers into 1-inch thick rounds. Use a melon baller or small spoon to scoop out a portion of the center from each round, creating a small cup. Be sure not to scoop all the way through to the bottom.

Step 3

In a medium-sized mixing bowl, combine the cream cheese, Greek yogurt, chopped fresh dill, lemon zest, garlic powder, salt, and black pepper. Mix until smooth and well combined.

Step 4

Transfer the cream cheese mixture into a piping bag or a resealable plastic bag with one corner snipped off. Pipe the filling into the cucumber cups, filling them generously.

Step 5

Slice the cherry tomatoes in half. Top each cucumber cup with half a cherry tomato as a garnish.
