Ingredients

  • 2 English cucumbers
  • 115 grams Cream cheese, softened
  • 2 tablespoons Prepared horseradish
  • 2 tablespoons Sour cream
  • 1 tablespoon Fresh dill, chopped
  • 1 tablespoon Fresh chives, chopped
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0 Optional garnish: additional dill or chives

Directions

Step 1

Wash the cucumbers thoroughly and pat them dry with a clean towel.

Step 2

Cut each cucumber into 1-inch thick rounds. You should get about 6 cups per cucumber, depending on size.

Step 3

Using a small melon baller or a teaspoon, carefully scoop out the center of each cucumber round to create a cup, leaving the bottom intact. Be careful not to scoop all the way through.

Step 4

In a mixing bowl, combine the cream cheese, prepared horseradish, sour cream, chopped dill, chopped chives, garlic powder, salt, and black pepper. Mix thoroughly until smooth and well combined.

Step 5

Transfer the horseradish filling to a piping bag fitted with a star tip, or alternatively, use a small spoon for filling.

Step 6

Pipe or spoon the horseradish mixture into each cucumber cup, filling almost to the brim.

Step 7

Arrange the cucumber cups on a serving platter and garnish with additional dill or chives, if desired.

Step 8

Serve immediately or refrigerate for up to 2 hours before serving. Enjoy!
