Ingredients

  • 250 grams Pasta (fusilli, rotini, or penne)
  • 2 medium Cucumber
  • 1 cup Fresh cilantro
  • 0.5 medium Red onion
  • 1 cup Cherry tomatoes
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Fresh lime juice
  • 2 cloves Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Ground cumin
  • 0.5 cup Feta cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain, rinse with cold water, and set aside.

While the pasta is cooking, peel the cucumbers if desired, then cut them into small bite-sized pieces or half-moons. Place in a large mixing bowl.

Finely chop the fresh cilantro and add it to the bowl with the cucumbers.
