Ingredients

  • 8 oz bow tie pasta
  • 1 large English cucumber
  • 1 cup cherry tomatoes
  • 1 small red onion
  • 2 tbsp fresh dill
  • 1 cup Greek yogurt

  • 2 tbsp lemon juice
  • 1 large garlic clove
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup feta cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to the package instructions until al dente. Drain the pasta and rinse under cold water to cool. Set aside.

While the pasta is cooking, wash and slice the English cucumber into thin half-moons. Halve the cherry tomatoes and finely chop the red onion. If using fresh dill, finely mince it. Set these ingredients aside.
