Ingredients

  • 2 large Cucumber
  • 1.5 cups Greek yogurt
  • 1 cup Vegetable stock
  • 2 tablespoons (chopped) Fresh chives
  • 2 tablespoons (chopped) Fresh dill
  • 2 tablespoons Lemon juice
  • 1 clove Garlic
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 4 pieces Ice cubes

Directions

Step 1

Peel the cucumbers and slice them lengthwise. Scoop out the seeds with a spoon, then chop them into large chunks.

Step 2

In a blender, combine the chopped cucumbers, Greek yogurt, vegetable stock, chives, dill, lemon juice, garlic, olive oil, salt, and ground black pepper.

Step 3

Blend until the mixture is smooth and creamy. If the consistency is too thick, add more vegetable stock, one tablespoon at a time, until the desired texture is reached.

Step 4

Add the ice cubes to the blender and pulse a few times to chill the soup further and refine its texture.

Step 5

Taste and adjust seasoning with additional salt or lemon juice if needed.

Step 6

Pour the soup into a large bowl, cover with plastic wrap, and refrigerate for at least 1 hour to allow the flavors to meld.

Step 7

When ready to serve, stir the soup well and ladle it into bowls. Garnish with additional chopped chives and dill, if desired.

Step 8

Serve chilled and enjoy!
