Ingredients

  • 500 grams Pork loin or shoulder, cubed
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 1 large Yellow onion, sliced
  • 2 cloves Garlic cloves, minced
  • 2 medium Apples, peeled, cored, and sliced
  • 50 grams Raisins
  • 250 milliliters Chicken broth
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Fresh thyme leaves
  • 0.25 teaspoon Ground cinnamon (optional)

Directions

Step 1

Season the cubed pork with salt and pepper and set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the cubed pork in batches to avoid overcrowding and cook until browned on all sides. Remove the pork from the skillet and set aside.

Step 3

Reduce the heat to medium, add the remaining olive oil and butter to the skillet, and allow it to melt. Add the sliced onions and cook for 5-7 minutes, stirring occasionally, until softened and lightly caramelized.

Step 4

Stir in the minced garlic and cook for 1 minute, or until fragrant.

Step 5

Add the sliced apples and raisins to the skillet. Cook for another 3-4 minutes, stirring occasionally, until the apples start to soften.

Step 6

Return the browned pork to the skillet and stir to combine with the onion, apple, and raisin mixture.

Step 7

Pour in the chicken broth and apple cider vinegar. Add the fresh thyme leaves and optional ground cinnamon. Stir to combine.

Step 8

Bring the mixture to a gentle simmer. Cover the skillet with a lid and cook over low heat for 25-30 minutes, or until the pork is tender and the flavors are well combined.

Step 9

Taste and adjust seasoning with additional salt or pepper, if needed.

Step 10

Serve warm as a main dish with your choice of sides, such as mashed potatoes, rice, or crusty bread.
