  • 2 tbsp capers
  • 1 cup raisin
  • 1 tsp ground cumin
  • 0.5 tsp ground cinnamon
  • 1 whole bay leaf
  • 1.5 tsp (to taste) salt
  • 0.5 tsp black pepper
  • 2 tbsp (chopped, for garnish) fresh cilantro

Directions

Step 1

Heat the olive oil in a large skillet or sauté pan over medium heat.

Step 2

Add the diced onion and bell pepper to the pan and sauté for 5-7 minutes, or until they are softened and fragrant.

Stir in the minced garlic and cook for an additional 1-2 minutes, being careful not to let it burn.
