Ingredients

  • 4 pieces Chicken breasts
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Fresh lime juice
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Fresh pineapple, diced
  • 0.5 cup Red onion, finely chopped
  • 0.25 cup Fresh cilantro, chopped
  • 1 piece Jalapeño, seeded and finely chopped
  • 1 tablespoon Fresh lime juice (for salsa)
  • 0.25 teaspoon Salt (for salsa)
  • 0.25 teaspoon Black pepper (for salsa)

Directions

Step 1

In a medium bowl, prepare the marinade by whisking together olive oil, minced garlic, lime juice, ground cumin, ground coriander, smoked paprika, dried oregano, salt, and black pepper.

Step 2

Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish, and let it marinate in the refrigerator for at least 1 hour or up to 4 hours.

Step 3

While the chicken marinates, prepare the pineapple salsa. In a mixing bowl, combine diced pineapple, red onion, fresh cilantro, chopped jalapeño, lime juice, salt, and black pepper. Mix gently to combine. Cover and refrigerate until ready to serve.

Step 4

Heat a large skillet, grill pan, or outdoor grill over medium-high heat. Remove the chicken from the marinade and pat it dry with paper towels. Discard the marinade.

Step 5

Cook the chicken for about 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is lightly browned and cooked through.

Step 6

Remove the chicken from the heat and let it rest for 5 minutes before serving.

Step 7

Serve the chicken hot, topped with the fresh pineapple salsa. Garnish with additional cilantro if desired. Accompany with rice, beans, or a side salad for a complete meal.
