Ingredients

  • 4 whole ripe avocados
  • 250 grams ground beef
  • 1 cup black beans
  • 0.5 medium, diced red onion
  • 1 small, diced red bell pepper
  • 2 cloves, minced garlic
  • 2 tablespoons olive oil
  • 1 teaspoon cumin powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons, chopped fresh cilantro
  • 0.25 cup, crumbled cotija cheese

Directions

Step 1

Cut the avocados in half, remove the pits, and carefully scoop out a portion of the flesh to create a cavity for the filling. Reserve the scooped-out avocado flesh in a bowl.

Step 2

Heat the olive oil in a skillet over medium heat. Add the diced red onion and red bell pepper, and sauté for 3-4 minutes until softened.

Step 3

Add the minced garlic to the skillet and cook for 1 minute until fragrant. Then, add the ground beef and cook, breaking it apart with a spoon, until fully browned (about 5-7 minutes).

Step 4

Stir in the cumin powder, smoked paprika, salt, and ground black pepper. Cook for 1 more minute to toast the spices.

Step 5

Mix in the black beans and cook for another 2 minutes until everything is well-combined and heated through.

Step 6

Remove the skillet from heat and stir in the lime juice and half of the chopped cilantro. Taste and adjust seasoning if needed.

Step 7

Mash the reserved avocado flesh in the bowl and gently fold it into the cooked beef and bean mixture to add creaminess.

Step 8

Spoon the filling into the avocado halves, generously packing the cavities.

Step 9

Top each stuffed avocado with crumbled cotija cheese and sprinkle with the remaining chopped cilantro.

Step 10

Serve immediately and enjoy this flavorful Cuban-inspired dish!
