Ingredients

  • 4 pieces Bone-in pork chops
  • 6 cloves Garlic cloves
  • 1 cup Orange juice (freshly squeezed)
  • 0.25 cup Lime juice (freshly squeezed)
  • 0.25 cup Olive oil
  • 1.5 teaspoons Kosher salt
  • 1 teaspoon Ground cumin
  • 1 teaspoon Oregano (dried)
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Cilantro (fresh, chopped)
  • 1 large Onion (sliced)

Directions

Step 1

Place the pork chops in a large, shallow dish.

Step 2

In a mortar and pestle or in a small food processor, mash the garlic cloves with the salt to create a smooth paste.

Step 3

In a medium bowl, mix the garlic paste with orange juice, lime juice, olive oil, ground cumin, oregano, and black pepper. Whisk until well combined to create the mojo marinade.

Step 4

Pour the mojo marinade over the pork chops, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to deepen.

Step 5

Remove the pork chops from the refrigerator 30 minutes before cooking to bring them to room temperature.

Step 6

Heat a large skillet or grill pan over medium-high heat. Lightly grease the pan with a drizzle of olive oil.

Step 7

Sear the pork chops for 4-5 minutes on each side, or until they develop a golden-brown crust and are cooked through (internal temperature should reach 145°F). Remove from the pan and let them rest for 5 minutes.

Step 8

Reduce the heat to medium and add the sliced onion to the same skillet. Sauté for 3-4 minutes, stirring occasionally, until softened and lightly caramelized.

Step 9

Pour the leftover mojo marinade into the pan with the onions and bring it to a simmer. Cook for 2-3 minutes to slightly reduce the sauce, then stir in the fresh chopped cilantro.

Step 10

Serve the pork chops topped with the cooked onions and mojo sauce. Pair with rice, black beans, or fried plantains for a complete Cuban-inspired meal.
