Ingredients

  • 1 pound ground beef (80% lean)
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely diced
  • 1 medium green bell pepper, finely diced
  • 3 cloves garlic cloves, minced
  • 14.5 ounces canned diced tomatoes
  • 2 tablespoons tomato paste
  • 0.25 cup dry white wine (optional)
  • 0.5 cup green olives with pimentos, sliced
  • 0.25 cup raisins
  • 1 teaspoon ground cumin
  • 1 teaspoon ground oregano
  • 0.25 teaspoon ground cinnamon (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 leaf bay leaf
  • 2 tablespoons fresh cilantro (for garnish), chopped
  • 4 cups white rice (for serving, cooked separately)

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add the ground beef to the skillet and cook until browned and fully cooked. Drain any excess fat and set the beef aside.

Step 3

In the same skillet, add the diced onion and green bell pepper. Sauté for 4-5 minutes, or until softened.

Stir in the minced garlic and cook for another 30 seconds until fragrant.

Add the diced tomatoes, tomato paste, and dry white wine (if using) to the skillet. Stir to combine.

Return the cooked ground beef to the skillet and mix with the vegetables.
