  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Black beans (canned, drained and rinsed)
  • 1 cup Mandarin oranges (segments, fresh or canned)
  • 1 cup Red bell pepper (diced)
  • 0.25 cup Red onion (finely chopped)
  • 0.25 cup Cilantro (fresh, chopped)
  • 2 tablespoons Lime juice (for salad)
  • 1 tablespoon Olive oil (for salad dressing)
  • 1 teaspoon Honey
  • 0.25 teaspoon Salt (for salad seasoning)
  • 0.25 teaspoon Black pepper (for salad seasoning)

Directions

Step 1

In a medium bowl, whisk together minced garlic, freshly squeezed orange juice, lime juice, olive oil, ground cumin, dried oregano, salt, and black pepper to create the mojo marinade.
