Ingredients

  • 1 lb Ground beef
  • 0.5 lb Ground pork
  • 2 cloves Garlic cloves
  • 1 tsp Smoked paprika
  • 1 tsp Ground cumin
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Breadcrumbs
  • 1 large Egg
  • 3 medium Potatoes
  • 2 cups Vegetable oil
  • 0.5 cup Ketchup
  • 1 tbsp White vinegar
  • 1 tsp Sugar
  • 4 pieces Burger buns or Cuban rolls
  • 2 tbsp Butter

Directions

Step 1

Peel the potatoes and cut them into matchstick-sized fries. Soak them in cold water for 15 minutes to remove excess starch, then drain and pat them dry with paper towels.

Step 2

In a mixing bowl, combine the ground beef, ground pork, minced garlic, smoked paprika, cumin, salt, black pepper, breadcrumbs, and egg. Mix thoroughly, but do not overwork the meat.

Step 3

Shape the meat mixture into 4 even patties, slightly thinner than traditional burger patties, as they will puff up when cooked. Set aside.

Step 4

Prepare the homemade ketchup sauce: In a small saucepan, combine the ketchup, white vinegar, and sugar. Stir over low heat until well blended. Set aside to cool.

Step 5

Heat vegetable oil in a large, deep skillet or Dutch oven to 350°F (175°C). Fry the matchstick potatoes in batches until golden and crispy, about 3-4 minutes per batch. Drain on paper towels and season lightly with salt.

In a large skillet or flat-top griddle, melt the butter over medium heat. Toast the burger buns or Cuban rolls until golden brown. Remove and set aside.

Using the same skillet, cook the beef and pork patties over medium-high heat until browned and cooked through, about 3-4 minutes per side.

Assemble the fritas: Place a cooked patty on the bottom half of a toasted bun. Add a generous amount of crispy matchstick fries on top of the patty. Drizzle with the homemade ketchup sauce. Cover with the top half of the bun.

Serve immediately and enjoy with additional fries on the side if desired.
