Ingredients

  • 10 pieces Garlic cloves
  • 0.5 cup Olive oil
  • 0.25 cup Orange juice (freshly squeezed)
  • 0.25 cup Lime juice (freshly squeezed)
  • 2 tablespoons White vinegar
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Fresh oregano (chopped)
  • 2 pieces Bay leaves

Directions

Step 1

Peel the garlic cloves and finely mince them or mash them into a paste using a mortar and pestle for better flavor extraction.

Step 2

In a small saucepan, heat the olive oil over medium-low heat. Add the minced garlic and sauté for about 1–2 minutes until fragrant but not browned (be careful not to burn the garlic).

Step 3

Remove the saucepan from heat and let it cool slightly to avoid splattering when mixing in the citrus juices.

Step 4

Stir in the orange juice, lime juice, and white vinegar into the saucepan. Mix well to combine.

Step 5

Add the ground cumin, salt, black pepper, chopped oregano, and bay leaves to the mixture. Stir to incorporate all the ingredients.

Step 6

Return the saucepan to low heat and warm the sauce gently for about 2–3 minutes while stirring occasionally. This helps meld the flavors together without boiling the sauce.

Step 7

Remove from heat and let the mojo cool to room temperature. Discard the bay leaves before serving.

Step 8

Transfer the Cuban garlic sauce to a serving bowl or jar. It can be used immediately or stored in the refrigerator for up to a week.
