Ingredients

  • 2 cups fresh blueberries
  • 1 14-ounce can sweetened condensed milk
  • 1 12-ounce can evaporated milk
  • 1 cup whole milk
  • 4 large egg yolks
  • 3 tablespoons cornstarch
  • 0.33 cup granulated sugar
  • 1 teaspoon lime zest
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 2 tablespoons unsalted butter
  • 0.5 cup blueberries (for garnish)
  • 6 leaves mint leaves (optional, for garnish)

Directions

Step 1

In a medium saucepan, combine the fresh blueberries and granulated sugar. Cook over medium heat, stirring frequently, until the blueberries release their juices and form a syrupy consistency, about 5 minutes. Remove from heat and set aside.

Step 2

In a large mixing bowl, whisk together the sweetened condensed milk, evaporated milk, whole milk, egg yolks, cornstarch, lime zest, vanilla extract, ground cinnamon, and salt until smooth.

Step 3

Pour the milk mixture into a medium saucepan and place it over low-medium heat. Cook, stirring constantly with a wooden spoon or silicone spatula, until the mixture thickens into a smooth custard, about 12-15 minutes. Be careful not to boil the mixture to avoid curdling.

Step 4

Once thickened, remove the saucepan from heat and stir in the unsalted butter until fully melted and incorporated.

Step 5

Gently fold in the cooked blueberry mixture, reserving a small amount for topping if desired.

Step 6

Divide the pudding evenly among 6 small ramekins or serving glasses. Allow the pudding to cool to room temperature, then cover with plastic wrap and refrigerate for at least 2 hours or until chilled.

Step 7

Before serving, garnish each pudding with a few fresh blueberries and a sprig of mint, if desired.

Step 8

Serve chilled and enjoy the creamy, fruity taste of Cuban Blueberry Pudding!
