  • 2 tablespoons (for frying) Olive oil
  • 1 cup (uncooked) White rice
  • 1 cup (diced fresh or canned, drained) Pineapple
  • 1 cup Coconut milk
  • 1 cup Water
  • 1 whole (zested and juiced) Lime
  • 2 tablespoons (sliced, for garnish) Scallions
  • 2 teaspoons (optional, for serving) Hot sauce

Directions

Step 1

Start by preparing the pineapple rice. Rinse the white rice under cold water until it runs clear, then drain.
