  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cayenne pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (optional garnish)
  • 2 tablespoons sour cream (optional garnish)
  • 1 cup shredded cheddar cheese (optional garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the diced onion and sauté until softened and translucent, about 5 minutes.

Stir in the garlic, red bell pepper, and optional jalapeño, and cook for another 3 minutes until fragrant.
