Ingredients

  • 4 lbs Boneless pork shoulder roast
  • 1.5 cups Rock candy (clear or amber)
  • 0.5 cups Soy sauce
  • 0.25 cups Hoisin sauce
  • 2 tbsp Fresh ginger (grated)
  • 4 cloves Garlic cloves (minced)
  • 1 tsp Five-spice powder
  • 2 tbsp Vegetable oil
  • 1 cup Water
  • 1 tbsp Cornstarch
  • 1 tbsp Water (for slurry)
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Pat the pork roast dry with paper towels and season it with salt and black pepper on all sides.

Step 3

Heat vegetable oil in a large oven-safe skillet or Dutch oven over medium-high heat. Sear the pork roast on all sides until golden brown, about 3-4 minutes per side. Remove the pork and set it aside.

Step 4

In the same skillet, reduce the heat to medium and add the minced garlic and grated ginger. Cook until aromatic, about 1 minute.

Step 5

Add soy sauce, hoisin sauce, five-spice powder, and 1 cup of water to the skillet. Stir to combine, scraping up any browned bits from the bottom of the pan.

Step 6

Place the seared pork roast back into the skillet, ensuring it is coated with the sauce.

Step 7

Cover the skillet with a lid (or aluminum foil if unavailable) and transfer it to the preheated oven. Cook for about 2.5 hours, basting the pork every 30 minutes with the pan juices.

Step 8

While the pork is cooking, prepare the rock candy glaze. In a small saucepan, combine the rock candy and 1 cup of water. Heat over medium heat until the candy dissolves completely, stirring occasionally. Set the glaze aside.

Step 9

After 2.5 hours, remove the skillet from the oven. Brush the pork generously with the prepared rock candy glaze, ensuring an even coating.

Step 10

Return the pork to the oven, uncovered, and increase the oven temperature to 375°F (190°C). Roast for an additional 30 minutes, basting with glaze every 10 minutes, until the glaze is caramelized and the pork reaches an internal temperature of 145°F (63°C).

Step 11

Remove the pork from the oven and let it rest for 10-15 minutes before slicing.

Step 12

If the pan juices are too thin, create a slurry by mixing 1 tablespoon of cornstarch with 1 tablespoon of water. Stir it into the pan juices and simmer over medium heat until thickened. Serve the thickened sauce alongside the sliced pork.
