Ingredients

  • 2 lbs pork shoulder (cut into 1-inch cubes)
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 large yellow onion (diced)
  • 4 cloves garlic cloves (minced)
  • 3 cups chicken broth
  • 1 lb tomatillos (husked, rinsed, and quartered)
  • 4 medium roasted green chiles (peeled and chopped)
  • 1 medium jalapeño (seeded and diced, optional for heat)
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 0.5 cup fresh cilantro (chopped)
  • 1 whole lime (juiced)

Directions

Step 1

Season the pork cubes with salt and pepper.

Step 2

In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Brown the pork cubes in batches, making sure not to overcrowd the pan. Transfer the browned pork to a plate and set aside.

Step 3

In the same pot, add the diced onion. Sauté for 5-7 minutes, stirring occasionally, until softened and translucent.

Step 4

Add the minced garlic to the onion and sauté for 1-2 minutes, until fragrant.

Step 5

Pour in 1 cup of chicken broth and deglaze the pot by scraping up any browned bits from the bottom.

Step 6

Add the tomatillos, roasted green chiles, jalapeño (if using), ground cumin, and dried oregano to the pot. Stir to combine.

Step 7

Return the browned pork and any accumulated juices to the pot. Pour in the remaining 2 cups of chicken broth.

Step 8

Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and simmer for 1.5-2 hours, or until the pork is tender and the flavors have melded together.

Step 9

Once the stew is cooked, stir in the fresh cilantro and lime juice. Taste and adjust seasoning with additional salt and pepper, if needed.

Step 10

Serve hot over rice, with warm tortillas, or enjoy as a standalone stew.
