Ingredients

  • 200 grams Granulated sugar
  • 3 large Lemons
  • 60 grams All-purpose flour
  • 4 large Eggs
  • 60 grams Unsalted butter
  • 240 milliliters Milk
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoons Salt
  • 10 grams Powdered sugar (optional, for topping)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease a 9-inch pie dish with butter or non-stick cooking spray.

Step 2

Zest two of the lemons and set the zest aside. Juice all three lemons, ensuring you have approximately 120 milliliters of fresh lemon juice.

Step 3

In a medium bowl, whisk together the granulated sugar, lemon zest, and all-purpose flour to combine evenly.

Step 4

In a separate large bowl, beat the eggs until frothy. Melt the butter and slowly whisk it into the eggs. Add the milk, vanilla extract, lemon juice, and salt, mixing until smooth.

Step 5

Slowly incorporate the dry ingredients into the wet ingredients, whisking gently to ensure no lumps remain. The batter will be thin—this is normal.

Step 6

Pour the batter into the greased pie dish and transfer it to the oven.

Step 7

Bake for 40-45 minutes, or until the center is set and a toothpick inserted comes out clean. The top should be golden brown, and the edges may slightly puff up.

Step 8

Allow the pie to cool completely at room temperature, and then refrigerate for at least 2 hours for optimal texture.

Step 9

Before serving, dust the top of the pie with powdered sugar if desired. Slice and enjoy!
