Ingredients

  • 200 grams chorizo sausage
  • 6 large eggs
  • 120 ml heavy cream
  • 120 ml whole milk
  • 100 grams shredded cheddar cheese
  • 1 medium onion
  • 1 medium red bell pepper
  • 60 grams spinach
  • 2 cloves garlic
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon olive oil
  • 1 optional butter or non-stick spray

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 9-inch pie dish with butter or non-stick spray.

Step 2

Remove the chorizo from its casing (if applicable), and cook it in a skillet over medium heat for 5-7 minutes, breaking it into small pieces as it cooks. Once fully cooked, transfer to a bowl and set aside.

Dice the onion and red bell pepper. Mince the garlic cloves.

In the same skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the onion and red bell pepper for 3-4 minutes, or until softened.
