  • 2 medium Russet potatoes
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion

  • 6 large Eggs
  • 0.5 cups Milk
  • 1 cup Shredded cheddar cheese
  • 2 cups Fresh spinach
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Paprika

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or baking dish with olive oil or cooking spray.

Peel and thinly slice the russet potatoes into rounds about 1/8-inch thick. Heat 1 tablespoon of olive oil in a large skillet over medium heat, and sauté the potato slices until just tender, about 5-7 minutes. Set aside to cool slightly.
