Ingredients

  • 4 pieces (6-8 oz each) rump steak
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried rosemary
  • 2 tablespoons olive oil
  • 2 large yellow onions
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup milk
  • 1 egg
  • 1 teaspoon cracked black pepper
  • 0.5 teaspoon paprika (for onion rings)
  • 4 cups (for frying) vegetable oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and lightly grease a baking tray.

Step 2

In a small bowl, mix together 2 teaspoons of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, 1 teaspoon of paprika, and 1 teaspoon of dried rosemary to create your steak crust seasoning.

Step 3

Rub each piece of rump steak evenly with olive oil, then coat generously with the seasoning on all sides. Set steaks aside to marinate briefly.

Step 4

Heat a large cast-iron skillet over medium-high heat. Sear each steak for 2-3 minutes per side until a golden crust forms. Transfer the steaks to the greased baking tray.

Step 5

Roast the crusted steaks in the oven for 8-12 minutes (depending on desired doneness). Use a meat thermometer to check: 135°F (medium-rare), 145°F (medium), or 160°F (well-done). Let the steaks rest for 5-10 minutes after removing from the oven.

Step 6

While the steak cooks, prepare the onion rings. Peel the onions and cut into 1/2-inch-thick rings, then separate the layers.

Step 7

In a bowl, combine the flour, 1 teaspoon of baking powder, 1 teaspoon of cracked black pepper, and 1/2 teaspoon of paprika. In a separate bowl, whisk together the milk and egg.

Step 8

Dip each onion ring into the flour mixture, then into the milk-egg mixture, and back into the flour mixture to coat thoroughly.

Step 9

Heat the vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the onion rings in batches for 2-3 minutes or until golden and crispy. Drain on paper towels and lightly sprinkle with salt, if desired.

Step 10

Serve the crusted rump steaks immediately, topped with crispy speckled onion rings. Pair with your favorite vegetables or a side salad for a complete meal.
