Ingredients

  • 500 grams Prawns (peeled and deveined)
  • 300 grams Asparagus spears (trimmed and cut into 2-inch pieces)
  • 3 tablespoons Butter
  • 3 cloves Garlic (minced)
  • 3 tablespoons All-purpose flour
  • 2 cups Milk
  • 100 grams Cream cheese (softened)
  • 1 cup Parmesan cheese (grated)
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 cup Panko breadcrumbs
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh parsley (finely chopped)
  • 1 teaspoon Lemon zest

Directions

Step 1

Preheat your oven to 190°C (375°F). Grease a baking dish lightly with olive oil and set aside.

Step 2

Bring a pot of salted water to a boil. Blanch the asparagus for 2-3 minutes until bright green and slightly tender. Drain and immediately transfer to ice water to stop the cooking. Drain again and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 4

Stir in the flour and cook for another minute, creating a roux. Gradually whisk in the milk to create a smooth sauce.

Step 5

Add the cream cheese and half of the Parmesan cheese to the sauce, stirring until melted and smooth. Season with salt and pepper.

Step 6

In the prepared baking dish, combine the prawns, blanched asparagus, and the prepared sauce. Mix gently to evenly coat everything.

Step 7

In a small bowl, mix the panko breadcrumbs, olive oil, chopped parsley, lemon zest, and the remaining Parmesan cheese. Sprinkle this mixture evenly over the prawn and asparagus mixture in the baking dish.

Step 8

Bake in the preheated oven for 20-25 minutes or until the topping is golden and crispy, and the prawns are fully cooked through (opaque and pink).

Step 9

Remove from the oven and let rest for 5 minutes before serving. Garnish with additional parsley if desired.
