Ingredients

  • 500 grams fresh squid
  • 50 grams all-purpose flour
  • 25 grams cornstarch
  • 1 teaspoon baking powder
  • 1 large egg
  • 2 cloves garlic
  • 1 inch piece ginger
  • 2 sticks spring onions
  • 1 teaspoon salt
  • 0.5 teaspoon white pepper
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 500 ml vegetable oil

Directions

Step 1

Clean the squid thoroughly by removing the head, innards, and skin. Rinse under cold water and pat dry with paper towels.

Step 2

Cut the cleaned squid into small pieces and place in a food processor along with peeled garlic cloves and ginger. Pulse until finely minced.

Step 3

Transfer minced squid mixture into a large bowl.

Step 4

Chop spring onions finely and add to the bowl with the squid.

Add flour, cornstarch, baking powder, salt, and white pepper to the bowl.

In a separate small bowl, whisk the egg lightly and add to the squid mixture.
