Ingredients

  • 200 grams white sesame seeds
  • 200 grams granulated sugar
  • 100 grams honey
  • 50 milliliters water
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Directions

Step 1

Preheat a dry skillet over medium heat and add the sesame seeds. Toast the seeds for about 5 minutes, stirring frequently, until they are golden and fragrant. Transfer the toasted seeds to a bowl and set aside.

Step 2

Line a baking sheet with parchment paper or lightly grease it with oil. This will prevent the sesame bars from sticking once they're cooked.

Step 3

In a medium saucepan, combine the granulated sugar, honey, and water. Stir until mixed well, then place the saucepan over medium heat.

Step 4

Bring the mixture to a boil, stirring occasionally, until the sugar has dissolved completely.

Step 5

Once boiling, add the lemon juice, vanilla extract, and a pinch of salt. Continue boiling without stirring for about 8-10 minutes, or until the mixture reaches a golden caramel color.

Step 6

Add the toasted sesame seeds to the caramel mixture, and quickly stir to coat the seeds evenly with the caramel.

Step 7

Immediately pour the sesame mixture onto the prepared baking sheet. Use a spatula or the back of a spoon to spread the mixture into an even layer about 1/4 inch thick.

Step 8

Allow the sesame mixture to cool for about 10-15 minutes until it hardens slightly.

Step 9

Once slightly hardened, use a sharp knife to cut the slab into bars or squares of your desired size.

Step 10

Allow the bars to cool completely at room temperature before separating them.

Step 11

Store the sesame bars in an airtight container at room temperature for up to a week.
