Ingredients

  • 450 grams salmon fillet (skinless)
  • 120 grams cream cheese
  • 2 stalks green onions (finely chopped)
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 100 grams all-purpose flour
  • 2 large eggs
  • 150 grams panko breadcrumbs
  • 500 ml vegetable oil (for frying)

Directions

Step 1

Cut the salmon fillet into small chunks and place in a food processor.

Step 2

Add the cream cheese, green onions, lemon zest, salt, and black pepper to the food processor.

Step 3

Pulse the mixture until well combined but still slightly chunky. Do not puree completely.

Step 4

Portion the mixture into 6 equal parts, then shape each part into a log approximately 6-7 cm long.

Step 5

Place the shaped logs onto a baking sheet lined with parchment paper and chill them in the freezer for 15 minutes to firm up.

Step 6

Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.

Step 7

Remove the salmon logs from the freezer. Coat each log in flour, followed by the beaten egg, and finally the panko breadcrumbs. Ensure they are evenly coated.

Step 8

Heat the vegetable oil in a deep skillet or frying pan over medium heat until it reaches 175°C (350°F).

Step 9

Carefully place the breaded salmon logs into the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes, turning occasionally, until golden brown and crispy.

Step 10

Use a slotted spoon to transfer the fried salmon logs to a plate lined with paper towels to drain excess oil.

Step 11

Serve warm with your favorite dipping sauce, such as tartar sauce or sriracha mayo, and enjoy!
