Ingredients

  • 1 medium head (approximately 2.5 lbs) red cabbage
  • 3 medium carrots
  • 1 large red bell pepper
  • 4 stalks green onions

  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup sunflower seeds

Directions

Step 1

Remove the outer leaves of the red cabbage. Cut it into quarters, remove the core, and thinly slice the cabbage into shreds. Place the cabbage in a large mixing bowl.

Step 2

Peel and grate the carrots using a box grater or food processor. Add them to the bowl with the red cabbage.
