Ingredients

  • 150 grams rolled oats
  • 100 grams all-purpose flour
  • 100 grams unsalted butter
  • 75 grams light brown sugar
  • 50 grams granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 egg
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 180°C (160°C fan) or 350°F and line a baking sheet with parchment paper.

Step 2

In a medium bowl, mix together the rolled oats, all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the unsalted butter, light brown sugar, and granulated sugar until light and fluffy using a hand or stand mixer.

Step 4

Beat in the egg and vanilla extract until fully combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, stirring until a cohesive dough forms. Avoid overmixing.
