Ingredients

  • 2 cups Mixed nuts (almonds, cashews, pecans, or others of your choice)
  • 1 cup Rolled oats
  • 1.5 cups Dark or milk chocolate chips
  • 2 tablespoons Coconut oil
  • 2 tablespoons Honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Sea salt (for sprinkling)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2

Spread the mixed nuts and rolled oats evenly on the prepared baking sheet. Toast them in the oven for 5-7 minutes, or until fragrant and lightly golden. Set aside to cool.

Step 3

In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth (or melt using a double boiler on the stovetop).

Step 4

Stir the honey or maple syrup and vanilla extract into the melted chocolate mixture until well combined.

Step 5

In a large mixing bowl, combine the toasted nuts and oats. Pour the melted chocolate mixture over the top and gently fold to coat all the ingredients evenly.

Using a tablespoon or cookie scoop, drop clusters of the mixture onto a new sheet of parchment paper. Sprinkle a tiny pinch of sea salt over each cluster while the chocolate is still wet.
