Ingredients

  • 3 medium Boiled potatoes
  • 0.5 cup Green peas (fresh or frozen)
  • 1 medium Chopped onion
  • 1 Chopped green chili
  • 0.25 cup Chopped cilantro
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Cumin seeds
  • 1 teaspoon Salt
  • 1 tablespoon Vegetable oil
  • 8 slices White or whole wheat sandwich bread
  • 4 tablespoons Butter (for toasting)
  • 4 tablespoons Green chutney
  • 4 tablespoons Tomato ketchup
  • 1 small Sliced cucumber
  • 1 large Sliced tomato
  • 1 teaspoon Chaat masala
  • 0.5 cup Grated mozzarella cheese (optional)

Directions

Step 1

Mash the boiled potatoes in a mixing bowl. Set aside.

Step 2

Heat 1 tablespoon of vegetable oil in a pan on medium heat. Add cumin seeds and let them sizzle for 30 seconds.

Step 3

Add chopped onion and green chili. Sauté until the onion becomes translucent.

Step 4

Add turmeric powder, red chili powder, and salt. Stir well, then add the green peas and cook for 2-3 minutes.

Step 5

Add the mashed potatoes to the pan and mix thoroughly to combine. Cook for another 2 minutes. Add chopped cilantro and remove from heat.

Let the potato mixture cool slightly while preparing the bread slices.

Step 7

Spread green chutney on one side of 4 slices of bread and tomato ketchup on one side of the remaining 4 slices.

Step 8

Place a layer of the prepared potato filling on the chutney side of the bread slices and spread evenly.

Top the potato filling with cucumber slices, tomato slices, a sprinkle of chaat masala, and optional grated cheese if desired.

Cover each sandwich with a ketchup-spread slice of bread, pressing lightly.

Step 11

Heat a griddle or skillet over medium heat. Spread butter on the outside of each sandwich and place it on the griddle.

Step 12

Toast each side for 2-3 minutes or until golden brown and crispy. Press the sandwich gently with a spatula for even toasting.

Step 13

Remove from the griddle, slice each sandwich diagonally, and serve hot with extra green chutney and ketchup on the side.
